Short Ribs

     Short ribs are a cut of beef that come from the rib section of the cow. They are taken from the meaty and flavorful portion of the ribs, which is located between the chuck and brisket areas. Short ribs are known for their rich, beefy flavor and tenderness, as they are a heavily marbled and well-exercised cut of meat.

     Short ribs can be prepared in a variety of ways, including braising, grilling, smoking, or roasting. Short ribs are often cut into two different styles: English cut and flanken cut. English cut short ribs are longer and include a bone, while flanken cut short ribs are cut across the bone into thin strips.
